PINOT NERO: A GRAPE FOR THE ELECT FEW

Obtained from 100% pinot nero grapes, only the prime must from the first pressing is used. After a very brief maceration of a few hours to obtain the desired colour, a part of the base wine is fermented in barriques. The wine evolves for at least 60 months in contact with the yeasts before disgorgement.

Rousing, powerful and persistent. An untamed wine that encloses great energy within itself but at the same time is intensely pleasurable.

ORGANOLEPTIC CHARACTERISTICS

Classic golden reflections, the grape donates a rich colouring matter; The nose perceives balsamic scents first, the aromatic herbs merge with citrus fruits zest, going then through the wood with its typical aromas such as musk and pine resin; The fruit of white and yellow pulp is still crunchy, the wine will be at your best with the passing of time. In the mouth is full, tasty, flavourful, it resists to the iron notes that sometimes in a Blanc de noir are perceivable, it has elegance, surprising drinkability, noble and creamy effervescence. It is already well structured, but it is expected to have a great future.

COMBINATIONS RECOMMENDED BY NICOLA BONERA

In a meal it can tranquilly sustain the principal dish, white meats with sauces and dips, fish steaks with noble sauces and aromatisations, or first courses rich in dressing.
Pappardelle with wild boar sauce.
Truffled partridge, woodcock.
